If you want something to do this:
USB Mac -> converter -> DIN-8 Serial device
They're available from many sources. You'll find a few listed here:

I have an Entrega, which works great. They've been absorbed by someone else,
however, so don't go looking for one.
If you want something to do this:
Pre-USB Mac -> converter -> USB device
You won't find one. What you need in that case is a USB PCI card. Any
OHCI-compliant USB PCI card should work [the private-label CompUSA card is such
a beast, IIRC]. The ones that claim Mac-compatibility are generally more
expensive than those that don't but any OHCI card will work. The software to
support the card can be found at Apple's site [USB Adapter Support].
If you've got a pre-PCI Mac, Apple offers a converter called a "new machine". ;)
