Good, that's important, else this doesn't work. But with those settings it should work. You do have the Japanese Language Kit installed (if in OS 9)?

Now when I try with RB4.0.2 Carbon/OS X Japanese both controls
correctly display the Japanese text in the standalone app (I assume
it would work with RB3.5.2 Carbon/OS X Japanese too).

Don't assume -- test.

Should I use the Japanese RB version when I want to release a
Japanese version of my app?

No, it doesn't matter once you've built your app which version of RB was used to build it.
