If you want to count all of the "support" stuff I use rarely:
Codewarrior 8.3 although I don't really use it any more.
Very very very very few plugins. Very rarely will I use one, and then
only the free ones or the Carbon Events plugin.

DropStuff 6.5

And my favorite tools:
Unreal Tournament 2k4, and America's Army
Most important are Mail, iChat, and Safari though.
