Apparently I can put many kind of image format (pict, gif, png...) but I only get the generic Icon, or nothing at all when I build the App.

From your description it sounds like you're doing the right things. Depending on what type of application you're building (i.e. UB/MachO, PEF), the Finder doesn't always do the right thing after building. Usually duplicating the application in the Finder takes care of the problem.
